- 6 eggs
- Cream cheese (380 g)
- 1/2 cup of water (110 ml)
- Zest of an organic lemon (3 g)
- 1 can of condensed milk (397 ml)
- 1 cup of heavy cream (225 ml)
- 1 cup of white sugar (200 g)
preparation
- First, put the sugar and water in the flan dish and heat in a water bath until the sugar melts and caramel forms.
- Use a spoon to stir the mixture to prevent crystals from forming. Spread the caramel sauce in the pan, also on the side edges.
- Mix the cream cheese, condensed milk, cream, lemon zest and eggs well. You can do this with a whisk or with a mixer.
- Then put the mixture in the flan pan and put it in larger ovenproof dishes as a water bath.
- Place in the oven at 180ºC until the flan has set and the surface turns golden. Cover the mold and the vessel for the water bath with aluminum paper to prevent the steam from escaping.
- Then take it out of the oven and let it cool down. Cover the flan with a cloth to keep it as moist as possible.
- Once the flan has cooled, you can use a knife to detach the sides from the edge and then turn the pan over to turn the flan onto a plate.
Flan with strawberries
This variant also tastes delicious. All you need is a few strawberries and vanilla essence.

- 1 cup of heavy cream (225 ml)
- 1 cup of white sugar (200 g)
- 10 strawberries
- 4 teaspoons of vanilla essence (20 ml)
preparation
- Preheat the oven to 180ºC.
- Then heat the sugar and water in a saucepan, stirring constantly, to make the caramel sauce.
- As soon as the sauce turns golden, remove it from the heat immediately and place it in the flan or cake pan. Also coat the edges of the mold with it.
- Then process the strawberries together with the condensed milk in a blender.
- Mix the eggs with the cream well and add the vanilla essence and cream cheese.
- Then stir in the strawberry mix and pour everything into the mold with the caramel sauce.
- Now place the pan in a larger ovenproof bowl of hot water.
- Put everything together in the oven and heat in a water bath for around 45 to 60 minutes until the flan sets.
